As for where they are, probably chilling at home. They tend to have what we would consider traditional gender roles, where the females stay at home and reproduce.
You can also ask yourself what they eat, if they watch movies, if they play music...
But in the end it doesn't matter, it's not relevant to the story. It's not needed nor wanted to have this kind of details for the games. And I don't even think any of the books cared to invent something about that.
But hey, just imagine what you want about them. If not you, it's going to be some other dude in a book.
I don't recall the brutes lore offhand, but the Sangheili still have their homeworld, Sanghelios (among other colonized worlds). That's where they are. They live a rigid, military-like existence with a feudal style governmental structure.
The females are normally not permitted to go to war. The only leader(ish) Sangheili that I know of offhand that permits females to enter combat roles is the Arbiter. Their normal role is managing the affairs of the estate (and any office their spouse holds) as well as raising/protecting the children.

I like this point. I wonder what percentage of the population was drafted for war specifically for the human-covenant war. In current politics and countries today while some smaller countries give everyone military training when they reach a certain age, larger nations like the USA just hold a volunteer army.
