You can enable ESP files in the Data Files section of the launcher.
In my opinion Mod Organizer 2 is the best mod manager and it makes sense if you have more than three mods, cause you will not find all files of multiple mods in the game folder after a while if they consist of more than just an ESP file.
The problem with MO2 is that it does not support modlists like Path of the Prophet.
Any idea how I could get Vortex to work with Enderal SE ?

you can get vortex, it's much easier to use, and it's perfect for someone who's new at modding.
