Is there an additional setting for difficulty?
I know this sounds silly, and YES i am aware that I am terrible at the game, lol. I'm playing on novice and still having trouble. Pretty much every quest in my log is listed as "**" at least and is too difficult to do anything as I keep dying. I read that it's particularly difficult in the beginning before you get to Ark but i've been to Ark for a couple hours now trying to do quests around the city and been struggling. Terrified to go off on the next main quest because it's got ** as well so I figure i'll get stuck.

The game uses fixed NPC levels. There's no enemy level scaling with the player in Enderal, the way it is in Skyrim SE. It's possible to do ok in one area, and then suddenly come in contact with higher level enemies in the next. I've only played the game once, and can't remember how I kept from dying all the time, other than building up your strength, stamina and resistances. I hated the fixed level aspect, which is one reason I have no desire to ever play it again.

The stars are pretty much a level suggestion, hard to say which level exactly, each star is roughly 5-10 levels (also depends how strong your build is).
So for two star quests you should be around level 10.

I would not go to Ark before level 8, if you are lower than that I would suggest to do some side quests in Riverville.

Thanks. I suppose i'll head back out to Riverville and look for some more sidequests. I've been getting wrecked doing mostly anything. Some sidequest in Ark led me to searching a house and when walking in, theres a beetle. The beetle kills me in 1-2 hits and I can barely even damage the thing. Wild difficulty! BTW, that quest only has one * in my log.

So i actually went back and couldn't find anything --then looked on the wiki. Appears i've completed all quests in Riverville (there is 4 according to wiki). But i'm still only level 7.

Try cleaning the map around Golden Coast region - nothing gives more xp than old good massacre. You will also get some money for buying all those skill books.

Try the Power of the Prophet[www.nexusmods.com] mod. It makes the game a lot easier, and is good for casual adventuring in Enderal. I am trying it on a new playthrough, and so far it is working well. Psst: It amps the HP and MP regens, and even makes those pesky dangerous wolves your dearest Enderal friends. :-)

Perhaps ironically, i'm actually running the "Path of the Prophet" mod pack from nexus, which I think might be making my experience even more difficult than the vanilla.

Those are 2 different things:
* Path of the Prophet : Collection (of mods) - not a mod - intended to make the game tougher and more exciting.
* Power of the Prophet: Mod to make the game easier in most ways that newbies struggle with.

I suggest you start a new game with Power of the Prophet mod, you'll find the game more fun and less strenous.

If you've already progressed far along the storyline, you can continue with the mods added by Path of the Prophet (PotP), and try to get some mods that'll make the game easier (but they can conflict with the gameplay changes done by the PotP mods).

Try these cheat mods to make Enderal easier:
Power of the Prophet: https://www.nexusmods.com/enderalspecialedition/mods/156
Ring of Health Regeneration: https://www.nexusmods.com/enderalspecialedition/mods/39
Ward Shield: https://www.nexusmods.com/enderalspecialedition/mods/537
Arrow Crafting: https://www.nexusmods.com/enderalspecialedition/mods/537
UTS Utility Spells: https://www.nexusmods.com/skyrimspecialedition/mods/89055/
Quick Light: https://www.nexusmods.com/skyrimspecialedition/mods/12633

or dont install mutiple mods that change so much of the game and just get a mod that reduces the difficulty and makes the game easier to begin with: https://www.nexusmods.com/enderalspecialedition/mods/123

It's not ironic that you used a difficulty-increasing modpack and then spoke about the game being too hard. Irony would have been if the game got easier after using the modpack.

It's not irony. It's the intended effect.
