The Practice Mode will help you with that, and also to improve your muscle memory with the neutral and situational combos.
MK on the other hand is not as beginner friendly because until you understand the gameplay systems the games feel very rigid and stiff. MK is one of the few FGs that has a block button and that alone throws many casual players off because they have to get use to holding another button to block incoming attacks instead of just holding back to block.
Do you have to memorize every single thing to be decent? No of course not, but all fighting games have a degree of "muscle memory" to them. Muscle Memory is simply getting your hands/fingers (along with your mind) use to doing certain commands, combos or generally getting comfortable with all of the games mechanics.
If you were to really get into one of the 2 I would choose MK11, because it is much more new player friendly due to the slower pace, auto meter refilling, less complex combos/movement, higher damage, and simplified comeback mechanics (fatal blow).
MKX on the other hand is much more fun to play if you like more complexity in your fighting games, with things like faster movement, meter management, 50/50 mix-ups, more moves/specials to utilize per character...etc.
Personally I like them both but MK11 is clearly more suited to newer players like yourself.

Its because MKX also has less restrictive and more loose gameplay then MK11. The difference will come in once you run into players who actuall know how to play the game.
MKX you will Not even get a chance to fight back against good players, but in MK11 you have more options, even as a new player to turn the tide of the match.
Trust me. MKX may seem easier but it 100% is not compared to MK11 and this is coming from someone who has played thousands of matches of each game.
You will learn real quick in MK11 that the systems are much more simplified.
