Basically Kitana is Asian coz she has an Asian sounding name and is one of the ninja characters. It doesn't really go much deeper than that

she was meant to be shang's daughter in earliest concepts -strongly reminds me ming the merciless and his daughter- and her name was kitsune, then it was modified into kitsune+katana

In 2009, Kitana's origins were revealed by her creator, John Tobias, who disclosed that she started out as an unplayable herald-type character called "Kitsune" during the early development of the original Mortal Kombat game in 1991; his inspiration at the time was the character of Princess Mariko from Jordan Mechner's 1984 video game Karateka.[note 3] In Tobias' design sketch, Kitsune wielded a single ornamental fan and "was going to fit into the story as Shang Lao's [early Shang Tsung] princess daughter—the spoil of victory for winning the tournament" who would betray her father after she fell for Liu Kang. Well, I mean , we're talking about MK11 Kitana, not pre-MK2 Kitana. Kitana was not Asian in MKX so the change from MKX to MK11 was like I said:

She's not Asian, she's Edenian, which is a made-up nationality. Same with Sindel and Jerrod...both from Edenia. Based on the principle that a child looks like a combination of both of their parents, we can assume that her pops Jerrod shared similar phenotypical characteristics to Kitana.

However, we haven't gotten a good look at Jerrod in this game, so who knows how it works in the current timeline. Maybe Kitana was really adopted, stolen away from Earthrealm? Who knows! It just is what it is.

Also, if you look at a picture of Sindel and Kitana side-by-side, you'll be surprised at how similar they look. The eyes, nose, mouth...not very far off. Once again, they're both Edenian, not Asian.
