Tuna fishing
I've tried my best but I can't actually reel in any tuna. They always end up getting farther away than I can reel them in. Is there a prerequisite to being able to catch them? I need tuna to cook a dish for Atuls dinner but can't actually get any

You have to reel in like 99% of the time. When it turns red you can still reel in for like.. a little longer. And you can start reeling again when it's still red. You need to get a feel for it.

The line only snaps when the rod is fully bent, so when it starts to turn red in the bent position, let go of the action button until your pole straightens out, then immediately start reeling again. The tapping method may also suffice, but this worked great for me, without the need for button mashing. Good luck!

It's annoying how exhausting even using the rapid tapping method is to get a tuna. You can't make a wrong move. Congrats devs you've made a conniption inducing fishing minigame on par with stardew valley :P

Late game, you can get a treasure map that unlocks a previously non-existent island where there's a shrine that upgrades your mining (letting you mine gemstones along with the usual ores) and your fishing (making the line take longer to turn red). Getting that upgrade makes catching tuna significantly easier, though you can still do it without it.
