As for other question, I'm not sure, it really depends on you and how you want to pace the game however going one by one is simply impossible, as spirits require materials from minigames that are unlocked by other spirits, for example. Same goes with max amount, you do have to free them at some point to get their flowers, to unlock new areas. I think 5 or 6 is top. I definitely had 5 at one point.
I can think of two different tasks/quests that require having total of 3 Spirits on board. But it's possible I missed something.
I also think I got a maximum of 5 spirits at the same time on my boat, but 6 might be the actual possible limit. I may have been able to get Elena sooner than I actually did.
