How does the Quality / Fashion / Luxury system work?

What does quality mean, and to what criteria of a type of clientele should we look to relate quality?

The green bar i quality level and in my experience appeal to the eco, tech people
The Blue bar is fashion and appeal towards the Hipsters
The purple bar is luxury and apeeal to the famous people.

As far as i observed, farmers, pensioners and students like cheap products because of their wealth.

For farmers low green, blue and purple bars, usually the basic things (i only had clothes shops so far, so the basic shirts and pants).

The students want cheap fashion stuff (blue bar higher than green, but also make sure, that it´s not too expensive).

I started making notes, which item appeals to which population group :-)
