Grilling Spree new characters unlocked but do not show in selection menu

My friend and I played 4 matches and the game said we unlocked Burger, Hot sauce and 2 costume pieces for Watermelon and Coffee. The costume pieces now show up on the character selection screen but we can't find the new characters. What am I missing?

If you select Bread or Watermelon in the character select screen, a new button prompt will show up in the bottom-right corner prompting you to press "X to switch character.
