So, to recap:
If you want to step back in time and play older PC versions, you can download old versions from Steam using the Steam client console. Look up a guide to help you with the process - you will need the AppID (Granny's is 962400), the DepotID (Granny's is 962401), and then the ManifestID for the version you want to downgrade to. You can find a complete list of old versions here on SteamDB[steamdb.info] - they are sorted by timestamp. What you want is what's in the final column - the long string of numbers.
i.e. If you want to downgrade to PC v1.0, you would pull the manifest ID from November 20th, 2018 - 2448675903593644379 - and use that in the Steam console to download the old files.
The downgrading process isn't too difficult, but it is a lot to explain and there are already more useful guides out there, so I'd strongly recommend looking for one of them. Hope this helped
