With 90% image at 4K, AA off, I can play on 50/60+.
1080p 200%? or 1440p 200%?
I would recommend putting AA on at TAA and you can lower the 90% to 70% or 80% instead. Anti-Aliasing at TAA makes a good difference in image quality, and losing 10% to 20% won't do much.

Anti-aliasing: FXAA and SMAA don't seem to make much of a difference to the FPS nor image quality. TAA looks blurry like a painting. Leon's hair looks like fuzzy wool unless you decide to use TAA, although I found Lara's hair in Rise of the Tomb Raider to be the same.

Shadow Quality : Medium
Shadow Cache: On. Leave this on!! Turning it off impacts the FPS drastically.
Contact Shadows: On
Screen Space Reflections: On
Subsurface Scattering: Off. Saves a few FPS, and it doesn't change the quality of the image much.
Volumetric Lighting Quality: Medium
Particle Lightning Quality: High
Ambient Occlusion: SSAO
Bloom: On
Lens Flare: On
Motion Blur: Off.
Depth of Field: On. Depending on your tastes, you might prefer to leave it off. I find it's a little wonky, but looks good when it works.
Lens Distortion: Off. I didn't notice this impacting how the game looks all that much.
Film Noise: Off
Verdict: The game looks great! Capcom has taken design elements from RE:7 and applied them well to this remake. I appreciated the accompanying images in the settings options that show how the graphics change depending on your selection.
4k 200%
Lol I have a 2080 everything maxed out at 1440p and get 90 to 120fps. You ain't getting no 100/120fps at 4k/200% kiddo

Why are you on 1440p instead of 4k DSR?
