Have you tried this?
Go into the properties menu for the game's exe file and put in something like this

"C:\Program Files (x86)\Minecraft.exe" -width 1280 -height 720

Obviously whatever is in the quotes is your RE2 demo exe location. I never really tried this with a modern game but this is how you in theory force the resolution.

tried many options, even did try to do any options via regedit. It just don't budge :D it feels that game launches itself in wierd resolution. So as after intro logos game goes fullscreen it screws up the output signal. Tried to somehow add in nvidia experience, but it doesen't seems to support it yet.

Very strange. I saw other people having the same problem. No such issues for me. Someone else said the error was complaining about the monitor being unable to handle higher than 60Hz but the game settings are 30Hz 60Hz and unlocked, as far as I know, so that shouldn't be a problem...

I guess I have one other idea. Just in case it is a frame rate issue of some kind, try using Direct3Doverrider. It forces Vsync and in doing so limits the frame rate.
