I might be wrong but in my eyes it wasn't worth the spend, also it was a free DLC at the launch.
Do people without dlc have access to the great bamboo Forrest on the map"?
adventuring there gives you bamboo as construction material and bamboo shoots that you can eat.
I believe the panda dlc also adds bamboo floors, roofs and walls to the game, as well as a big bamboo bed and bamboo folding screens, at least i think you need the panda dlc to get access to it.

And fishing through the use of rods.
It feels more like a flavor pack than anything, though i haven't tested the panda brothers full grown. Fishing feels more like a collect-a-thon trying to find all the different rod types+fishing spot combos for rare fish.
Fishing itself isn't a new groundbreaking mechanic. Get bite, click pole. Can only really be effective with 2-3 fishing at once because of how it works. There is no "auto-fishing", always the manual click the pole process, and you need to have that person selected to see their pole-click button when they get hits.
Pandas seem pretty awesome as you get 2x the hauling/mood boosting/pooping/casting/artifacts fighting, although if one goes down, they both do. Maybe that changes if you get the little one above child. Maybe it always stays child, not far enough with them. You also can't get them until later than you get the dog.
true you get 2x fighting and stuff, just dont expect to much from the fighting, the doggo is the warrior from all the spirit pets.
The Panda is more focussed on diplomacy
and they grow up eventually
Open the game's page in Steam's library. If you scroll down a little, you should see a "DLC" section with button called "manage my DLC" or something similar.
If you click that, you'll get a list of all currently installed DLCs. You can them remove the checkmark in front of this DLC to uninstall it.
Right click the game in your steam library -> Properties -> Dlc
you can uncheck it there, it should than disable the dlc.
As for the Panda pet, it is mostly used for diplomacy, its no warrior like the dog, thats for sure.
And another thing: it is possible to fish out beasts up to Primordial level. It is rare enough (I fish 100+ times and never even get GC one) to not be reliable way to farm them but if you want to fish for eureka event you will want to have a guardian who can deal with that.
