Parts packs. (Bluedog, FASA, Near Future *anything* etc.)
Planet packs. (JNSQ, Grannus, Galileo etc.)
Eye Candy. (Scatterer, Environmental Visual Enhancements, Astronomers pack)
Ear Candy. (Chatterer, engine sounds, RCS sounds etc.)
QOL mods. (Anything by Linux Guru Gamer, and even stuff he hasn't adopted yet... )

Chatter (Adds a little sound variety)
Kerbal Alarm Clock
MechJeb 2 - Almost every important tool in here
Parking Brake - Stop your vessel from sliding down a slope at .01m/s
SCANsat - Allows you better maps of the surface and bioms
1. Scatterer.
2. Parallax.
3. Environmental Visual Enchancements.
There are more but, with these the game looks much better than KSP2.

Final Frontier - "Cosmetic" Adds a ton of ribbons and keeps track of every Kerbal's career
Kerbal Alarm Clock - Set multiple alarms in a smart way
KIS - Inventory done right
KAS - Let's you build structural stuff in space and on the surface
SCANsat - Map the system - I LOVE this mod!
TAC Life Support- Adds survival to the game; don't use unless you know the game
Kerbal Engineer - Tells you what you NEED to know; invaluable
On top of that I throw mods depending on what I want to do, but I always start out with this list.
