the new fairing builder takes me 30x as long to build an infinitely uglier fairing with worse aerodynamics

Agreed, the original was easier/quicker to use, and looked better at the end.

fairings still cause invisible drag that flips your rocket but isn't shown on the center of drag

Yes, the old one was much better.

I have a feeling there is a level of complexity being added to stuff in the name of 'control' when it's actually counter-productive.
