T-800?
I'm kinda confused. I'm pretty sure the original Arnold infiltrator was called a T-800. But in the game T-800 are the "naked" ones and the infiltrator is a T-850. Is this a mistake or did I miss something?

I think you might have missed something, or maybe misheard it. We actually see two different Infiltrators over the course of the game. But one of them is the T-800 from the second movie. The other one, the one we fight, is a T-850; the only one in the game, as T-850's are from a different timeline.

T-800 is the endoskeleton. Model 101 is the same endoskeleton, with an Arnold 'suit' on, designed for infiltration purposes. I assume T-850 is an upgraded inner skeleton with a different model number, hence the different design.

Not according to the Terminator wiki. The wiki says that all T-800 Terminators are Infiltrators, but only a few of them are used for that purpose, and the ones used for that have an external sheath made from liquid human skin tissue. The rest of them are used for combat, so they don't have the liquid tissue sheath that the Arnold Terminators had; they don't need it. The T-850 Infiltrator DOES have an upgraded endoskeleton and inner systems, but it's from the T3: Rise of the Machines movie, which is an alternate timeline. The game is set during in the "Future War" timeline, and that's the timeline of the first two movies.
