Aside from just playing the game over at a different difficulty what else can you do when you beat the game?

Sorry, there's no endgame content right now unless they add it in a sequel or DLC. That's to be expected, however, with game titles like this which aren't on the level or budget of AAA gaming.

They must have made tons of money. It may be worth for them to drop a DLC about Baron surviving, or a whole DLC with as Stranger to carry you other self throug the main story.

Baron said humans are marginally better than machines. So it would of course be Baron and her revived Terminator army against humans.
Edit: I don't really want a sequel, storywise you can only go downhill from this excellent game.
