How much "Gameplay" does this game have?
My wife and I are playing through Chaos;Child, which has almost 0 gameplay. Is this much different? It would be nice to have a little more interaction for our next game.

Visual Novels generally have little gameplay.

This one, about as much as the AceAttorney series, just slightly different:

Investigation: You go somewhere, talk to people, maybe find clues until either you or Aiba are satisfied with the result.

Interrogation: Really easy puzzle game, where you have to show proof of your theory. I don't think you can fail this one though.

Psyncing: You control a character in the dreamworld, and have to find ways to unlock mental locks by solving puzzles. Each action you can take, will take away a certain amount of time from the total time limit of six minutes.
This part is also where this is different from normal visual novels. The ending you will get depends on how you solved the puzzle during the Psync.

Locked Routes:
Sometimes, you have to complete a route up to a certain point for locked parts of the other routes to appear.

That being said, this is still a visual novel and there is a lot of reading to be done. If you like detective mysteries, it's definitely worth a try anyway.
If you are still unsure, there is a ton of gameplay videos on youtube, although they might spoiler the puzzles.
"Lemniscate English" (I still can't believe this is actually a thing) is a good choice here, as it's just an somewhat in-universe- promotional trailer.
You can change to the original voices too btw., the pink haired girl sounds less annoying there. That being said, she is still plenty annoying.

Let me say this in advanced too: This is a legitimate detective mystery which you can actually solve, although information being all over the routes sometimes makes it hard to keep track.

It's definitely more responsive than just picking answers and then having to read through the fallout.

Last but not least, note that this DOES have gore.

To add to what Dracon said, visual novels are usually just what they say on the tin, while ADV games (from "adventure") feature gameplay elements similar to point 'n click games. Ace Attorney, Danganronpa, YU-NO, Root Letter... These are ADV games, not pure VNs. Then you have other hybrids with a huge VN part and some gameplay, like Utawarerumono or BlazBlue, which can respectively be considered RPGs and fighting games because their gameplay is integral to the game.

About the gore though, I think you shouldn't have trouble handling it if you're coming from Chaos;Child. Also, play Chaos;Head first to avoid getting spoiled on it through C;C. (And yes, C;C is part of the SciADV series, but that stands for Science Adventure series and not actual ADV games; don't ask me why the capitalisation though.)

This definitely has more interactions between the game and the players than C;C, but still not much. If you like these type of games but with a lot more interactions, check out Danganronpa and Zero Escape.

Yeah, those were some of my first games and 999 on the original DS was the game that got me into visual novels in general.
