Basically what can happen is you end up spending all your resources on bringing units back into squads you've got and leaving nothing to expand with.
So I try to keep units alive as long as possible and save up some resources to build another squad - even just basic infantry for the army. Then all the auto-rebuild goes back on and I aim to restore the front line and maintain the stalemate.
Rinse and repeat a few times and each time you add a new squad try to keep it back from the front line. What you're basically doing is aiming to hold a line with a limited force and let you build up a larger assault force. Then when you've a bunch of units ready and waiting you can strike one of the enemy bases. Your defensive force can hold the line at home against the other returning; whilst your new assault army just smashes the enemy base. If you win that great; you've just taken an opponent out.
Also get into the habit of watching units degrade and if they get too few squad members (3 or less) pull them back to restore numbers before sending them back into the fight.

So I went full defense and it worked! I slowly shredded their base with scarabs and the necron lord, as I had enough power to keep respawning them, while they were sending their forces into a chokepoint I created. I got so many kills the game was lagging because there were too many bodies on the ground.

In general AI in RTS games don't deal well with defensive turtling tactics. So if you can hold a line and build up behind it you can often power through the AI in stages (or in one big go).
And yep one of the big things in this game is to keep an eye on your resources. It's super easy to right click the icon and keep regenerating troops in units, and sometimes that's just what you want to do. But sometimes you need to pause it and take losses or pull back to allow you to upgrade to the next tech level or build a new unit or a tank etc...
