Done quite a bit of (simple-ish) modding but only for myself and I´m not an expert but I´m always glad to help if anyone has questions. I mostly just asked how to do stuff here on the forums and got help from people who are way more experienced though. They have always been very helpful :)
HOW TO CHANGE AI HEALTH FOR CAMPAIGN :
Go to attrib/tables/tuning and edit metamap_difficult_modifiers to change the AI health.
Set the value for the hard mode health maximum modifier to 1 for 100% health.
If you also want to change the player health, then edit player_metamap_difficulty_modifiers.
I've tried editing the health modifier as described by Jesper and I've seen no difference. If I edit easy from 0.25 to 1 (25% to 100%) and start a campaign the enemy still has 25% health. Obviously i activated the mod I created in the Game Manager. Any help with this would be appreciated as guides for using Corsix are... well they don't exist. Curiously, other changes I've made such as a larger unit cap did apply.
I have a thought or two though, first one is are you sure you edited the right file plus remembered to save it. Second thought is maybe you need to mod the base game file instead of the mod you made. Also have you tried to set it to something like 0.5 and see if that works ? (if setting it to 0.5 works then maybe setting it to 0.9 or 0.99 will too lol).
It´s just wild guesses on my part since I haven´t messed around with stuff like this much and as you say it´s impossible to find any guides.
Anyway I hope you figure it out or someone else with more experience can help. If you do please post the solution :)
P.s. I´d go experiment myself, I just don´t have a ton of time to do that before after new years at some point. Also don´t forget to make a backup save of your files if you start experimenting, I made the mistake of not doing that quite a few times and messed up the game so bad I had to reinstall it and start all over lol

You should use metamap_difficult_modifiers INSIDE "tables" folder, child option of tuning (which is child of tables folder); not in folder "Tuning" which is next to folder "tables".
I also was caught in this trap and make this thing right not with a first time:D
Is there a guide on how to do so? I downloaded the mod, but I can't see the option for editing the difficulty.
well, there is an exe file in the Unification folder, called Unification Configurator.
Run it, and you will see many options that are Campaign-oriented.
