Firstly, glad you're enjoying the game :)
Gold is used mainly to feed the greed'o meter to get unlocks for next runs. You're not supposed to be spending vast amount of it, you're supposed to be hoarding it. We do understand that this might not be intuitive though, and while it is stated on a pop up windows after your first game over, we might communicate on this better.
We have been surprised at the amount of player who managed to unlock all the items and followers so quickly, and indeed once you've unlocked everything I understand that gold might lose its glitter. We would need to think about ways to spend gold once you've unlocked everything.
