This little 'mini-game' makes me think of the old Mastermind game. It would be a lot easier if you could use all one ingredient to help eliminate those that aren't used.
The game always gives the indicators in the same order regardless of where your ingredient is: Green Check for a correct item in the correct spot;
Yellow rotating arrows for a correct item in the wrong spot; and
Red X for an incorrect item.
If you've got all red x's - GREAT - this makes the process so much easier as you can now test an ingredient in the same spot until you find the right one - then move on to the next position.
Whatever you do...do NOT change more than one ingredient at a time. Just because you have say, 2 checks...it does NOT mean the first and second ingredient are in the right spot. It just means 2 of the ingredients are correct and in the right spot, not which ones.
Test a spot until you get either a green check or yellow arrows. If the former, move to the next unknown spot. If the latter, switch the new items spot until you get a green check...the move on to the next unknown spot. Keep repeating this process until you have solved it.
While this process works...it is difficult when you start with more than 1 check/arrow...because now you have to swap in/out a new ingredient and hope the new one also isn't a green check or yellow arrow ingredient.
Also...it helps to keep in mind when new unknown recipes show up in your cookbook. You catch that new fish, get that new spice or vegetable...then you KNOW that is one of the ingredients; just not where. So if this part of the game is an issue (and you don't want to cheat by using the wiki), you'll be better off to stop doing what you're doing when you find a new ingredient and decipher the recipes before fishing/farming for that next ingredient.
Except that the unknown items are in a triangular or diamond shape, rather than in a straight line - this mini-game is very much like the old Mastermind board game. Where you've got ingredients (and more of them) rather than colored pegs (there were 6 unless you adopted the 'empty space' game alternative)

2. It is like Vanyel told: behind every questionmark is a definitive recipe hidden. That means there is only one solution in which you have to put the right ingredients in the right slot.
