You can do this in the game folder's player data folder if you play with UI on one character and then save the config into the other characters.
It will save you the hassle of spending 30 minutes per character

Tips:

Chat can be transparent, which means it goes invisible and the text will fade after 3 seconds of it not being updated.
By default the combat chat window is actually on the top left corner of your default screen position and is invisible, it blocks your mouse from targeting anything there as it does not turn red.

Instead put your chat windows below the game screen and make them transparent, but also put hotbars along the top of the chat UI box in overlapping the "bar". By doing this, your mouse won't trigger the chat/combat window to be visible by hovering over it.

Your quest logs can be compressed on the top left arrow. Uncheck "complete" to avoid clutter, and uncheck "Valinor" after you leave the island.

For equipment window, it's not very important to see the damage resistance so compress that right arrow.

Skill window is narrow but long, fit it where you like.

You should keep rune bag disabled if you don't use magic at all, and spell book and hunting book isn't vital to keep on, so hide those with V and H.

Due to how hotbars work, I suggest only needing 1 or 2. Using a gaming mouse or keyboard you can bind F1 to F12 keys for shortcuts, do whatever it takes to make it comfortable.

The follower UI window is finicky to click on all the time, so place it near the center of the screen beside the game window so you can command them ... only wish there are button shortcuts to put onto the hotbars.

The map will look tiny no matter what at higher resolutions, and zooming all the way out will forcibly shrink it's size... Keep it in the corner at a compact size.

The default positions of HP/SP/Rep/Level is badly aligned so I like to place it on the game screen on the bottom right edge with HP and Stamina near the bottom center.

You can play around with chat channels and how they are visible using commands.

/Who [channel name] reveals who is in what channel online.

Right clicking and using "Join" let's you join or create any channels for communication. The help channel is default, but some people may use "trade" and such.

You can use "/talk {}" commands to change what you want to talk in. If you have multiple chat windows, setting chat input to (any) means you can click a window and press enter to speak in in that type of chat.

I would suggest making a separate chat window elsewhere for 'environmental' text that appears like your actions and npc chatter.
Make it set to "say" and "whisper" and make it small so you can see a log of your actions nearby.

And in the game option, toggle off "long combat details" and "misses" and "out of range". It will reduce text clutter during combat and you will memorize a miss by the sfx.
