Should I really start over with another slayer in new game + or is "new game" ok ?
What are the benefits or inconveniences of a new game + ?

It's just redoing the same game with a little more difficulty for the first 3 moobs, having the same weapons (just the name that will change) and making a bloody outfit for the character with whom you will finish the NG+ and two trophies (if they don't bug and it's not won!)

Hmmm ok. But I am in front of a problem now.
I imported Carla's data into NG+ since I started with her.
Now I want to play with Bruno but I only have access to "normal gameplay".
The only character that can do NG+ is Carla :/ since the other slots are all greyed out.

yes you must have a character of lvl 30 to start NG+ ..

which means a new play through to reach lvl 30 (if you don't already have another play through ready) ..

all you have to do is reach lvl 30 with it to start a NG+ ..

your entire storage locker will be empty so you will have to bring your best leveled weapons
with you ..

i advise only your go to weapons because you will be replacing them by level 32 ..
and make sure you have ample amount of infected parts (you'll need them) ..
