They all are different games, and there are differences between the "normal" ReThinks and the ones that have a sub-name like "Evolved". (They are more like "branches" of the core idea behind them)
The "normal" ReThinks have static objects and are meant to be more complex than the Evolved games.
The "Evolved" ones are the ones with physics interaction and more dynamic gameplay, but not as complex as the upcoming game. (there are some complex puzzles in there.)
Each of them has its own Puzzles and mechanics. And the 2nd game has additional mechanics in comparison to the first game (be warned, the original ReThink has some jumping-stuff in it and is the oldest game, so it has its issues that i want to fix in a full re-creation at some point.) - the newer games do not have the jumping related stuff, only the first game.
The newer games are also more optimized, especially the upcoming game. (Please consider the system requirements :P)

The newer games are obviously the better games, and you might take a look at the reviews and/or youtube for more information on these games before going out and grabbing "them all" as you said.
If you are still unsure, maybe get the "Evolved 2" game to try it out, you can always refund it within 2 hours of playtime in the first two weeks after purchase, if you dont like it or it doesnt run properly.
When you write full re-creation is that a patch to the original, or a separate item on Steam?
Each of these games has support for years to come, unless i suddenly disappear :P
(And now I hope I didn't do bad advertising if the upcoming game doesn't have this feature for some reason... Yay brain, you gave me extra stress by yourself! Wooo!)
Still working on the game right now, since everything is new, it takes a lot of time to double-check everything, and i found like two truckloads of bugs >.<
I will probably move release, no chance i can get this done today. (which wont stop me from trying though, if nothing else breaks apart, i might get it done today)
EDIT: I moved it around by a week, im done for, i just cant get it done today, it would be bad.
I really tried, and i could have gotten it out there today, but no, thats not worth it.
I dont want to get into a situation like the first game 1,5 years ago, which was a total mess. (and still is, but this will change in the future)
