It's hard not get over burdened when you grab pretty much any/everything that's not nailed down (as I do), so I stay stocked up on my scrolls and make sure I've got at least one or two on me before venturing forth. =p
Just as an aside, Skyrim/Enderal is fully playable in third person and you can ride the horse that way. F key instantly swaps you between 1st/3rd person.
That said, I never use mine for hauling loot. I just pick a chest/barrel/corpse/whatever in a given area to dump all the sellable loot. Then Pick it all up and teleport to town to sell when I'm done.
I honestly didn't even realize the mount let you move normally while overburdened. :P
It's just that trying to do it on a horse (or a donkey, etc) has always made me dizzy for some reason.
I will try the F key while on my donkey (Tonto) and see how it goes. Thanks for the tip!
(The part about being able to move normally on a mount, while being over burdened, *might* just come in handy 'in a pinch.')

I don't think you can teleport from Silvergrove during the quest there.
(On a separate note, the F key toggles 1st/3rd person while on foot, but it didn't work while riding my trusty steed. I seem to recall this being the case in Skyrim too. No biggie though. ;)
The only time I ever shift into first person is when I really need to search shelves carefully.
