Third age you should start with Victoriossa - settlers gets much cheaper. Souvereign order of Malta is also worth
I always use also: rockets, flame throwers, dignitaries, flintflock rockets, fire towers because all this stuff adds a lot of fun
I dont recommend cards adding hospitalers, advanced buildings, trip to Jerusalem. There is no time to use in game, in my opinion
German tongue is used by most of players, but rest of tongues use in your way, in your style of game. For me tongues are quate expensive and not always worth of it
For rushing: pikes and x-bows traditionally, but I rush very seldom
For common play: sentinels and order hussars (which are better than ordinary hussars, especcially in secong age). I never use pikemen (sentinels are decent vs cavalry), hospitalers in late game, crossbows in lack of gold
About strategies: semi-FF > FF, FI
Compare strategies a few players and find the your own best way to play. Malta is so satisfying and is extreme boring-resistant (Deus-vulting and crusading theme, exterminations enemy's settlers with flame throwers xd < maybe it should be censored, making last stand stronghold are examples)

Watch a good game from a player and follow the build order, modify at your own risk and pleasure. After 100+ games you should be able to manipulate the civ as you want.
But it takes around 600 games against ALL civs in order to really do it proficiently.
600 because there are at least 3 ways to play a civ and you have 21 civs which makes 6(3) so 63*100 600+
That's the way to do it fast.
The game is too complex.
Start with that and play against any civ.
Anyway it depends all if you are playing offline or online.
I am talking of playing it online.
Offline it's like playing sim city, no offense.
