Can you do career mode and online races with classic cars?

I have F1 2018 already but I wondered if you could do the above in this game or not?

You can't do an entire career driving classic cars. However, in between races (in modern cars) you will get invitations to classic car events in which you can participate. You can race classic cars in unranked multiplayer lobbies. Ranked multiplayer lobbies are done in 'multiplayer cars' which is unique to that mode.

Edit: If you're thinking whether F1 2019 is worth a buy, it definitely is. The general consensus is it's the best F1 game to date.

You can use mods with classic cars foir career, BUT they uses only 3D models with fully saved handling, downforce, engines etc.
