druid (summon animal skill), necromancer (raise dead skill), and planeshifter (main summoner class with parallel dimension [creates a clone of yourself], summon outsider, gate [summons demon minions], and summon celestial skills)
and no, no dreaded "always online DRM" here at all...i think. this question is more for the dev.
some advice: i don't know the lvl cap (it's REALLY high though as you can put at least 10k points to a skill and there's a lvl 100k region) but early on, try to stick to a small number of classes and get your offense going. pumping the gate skill can help grind as the demons tend to generate decent aggro and shoot fireballs.
for defense, there's a bunch of passives for hp regen, various resistances (one that raise the resist cap past the 75% default with physical remaining capped at 75% and another that reduces the effects of enemy resist reducing debuff), armor, and phys res.
There is also an Engineer class that's a summoner.
Single player is possible even when you have no connection.
Players can't host their own servers. Just join everyone else and have a good time on the official servers!

main menu > login > select character > join game > select which server to join
You can set up your own private server...Idk why the dev is saying otherwise. Maybe it wasn't an option in 2020. You can find the files to do so inside your installation folder. There is a text file named "HowToCreateYourOwnServer" that outlines all the steps. This feature is really great to have since the game is so much fun to play with friends, that it would be a real shame if the official servers shut down and there wasn't a way to do so anymore.
The game also has a single player mode that can be accessed easily from the main menu.
