Here is a great video that explains travel times/goods.

crazy, but funny and challenging at the same time too.
Having the Docklands DLC was putting me in the position to import Potatoes,
to make a Setup of well placed Schnapps Distilleries around a Trade Union,
providing Electricity for it, and using these three Items in the Trade Union.
Sir Lewis Brindley, The Chemist
Feras Alsarami, The Persuader
Printing Press
This was taking away a lot of pressure, and saved all the space in the new
world for Coffee.
It is all about to get creative with your Production chains, well
selected items for it, including to optimize your Trade Routes.

1.Delivery delays :
You talking about late game so make sure you all cargo ships are steam powered so you dont care about wind . Give them speed bonuses and cargo slowdown reduction too .
If this dont help add another ship to trade route . If you dont have spare navy to protect them give them white flags
2.Revenue fail :
Thats happen when you make to many new houses or upgrade them and not watch production tab ! Missing just one product can be easy noticeable , going low on few in a city without big money savings is a game killer :( Best what you can do to reduce impact of this happening is to block consumption of products to lower class . Artisans pay you much less for can food than Engineers . Engineers will give you less for watches or light bulbs than Investors . When your stock are full again let them have staff again until you low again . You can keep much higher income this way .
3.Abnormal consumption :
You can reduce consumption with town halls . There some books with -40% to all alcohol consumption or - 100% to beer / rum
You can supply people for free with can food , watches , jewellery and alcohol
Some items let you produce something when producing something else . I cant get name of item from my head right now but you can get 1t of run for every 3t schnaps you produce or get free schnaps by producing potatoes from item :)
Propaganda can reduce your consumption by 60%
My biggest bugbear in late game is the sheer amount of orchards needed and they space they take. I got very bored with that and gave up.
