I would say around engineers and electricity, there is a big leap in the stuff you have to do to produce other things, but as long as you aren't stressing over it and just take your time on it, it should be fine.
I would personally say that the arctic is a bit unnecessarily difficult, so you might want to stay away from that place for the most part, but i think you need some of the stuff from there for late game investors.
Anno 1800 can get overwhelming. And it doesn't get any easier as you go forward - well at least not for me anyway. FWIW I have the same issue as you. When I start getting overwhelmed by a game I just save the game, quit and either load up a more casual game that's more fun and play it or just call it quits for the day for gaming.
Restrict yourself from playing Anno for a day or so. Come back to it with a plan in mind. Start 'er up and execute the plan. If it works you're movin' on and hopefully that feeling of being overwhelmed is gone. If not and you're still feeling overwhelmed then just quit and come back to it another day. It's just a game. Why put yourself thru something that makes you feel not good. Seriously. It's just a freakin' game.
Works for me. Well - kind'a. I still have yet to beat/win or whatever the main goal of Anno 1800 is to finish.
Keep in mind that games are meant to be fun. If one stops being fun then it's time to stop playing it, take a break and play a game that is fun. Then go back to the frustrating one for a while or just shelve it and use the experience to help decide if that game's genre is really what you want to dive in to.
Aside: Some people thrive on challenges, the harder the better. In games, in real life - doesn't matter. Challenges are what its all about. Others - not so much. Before I retired I got enough of that challenge BS to last me for the rest of my life. I don't miss it and sure as hell am not gonna let a game cause me any angst. Not worth it. In real life you just have to deal with the frustration. In a game - nope - not goin' there. Every now and then when I get that overwhelmed feeling I'll just save the game and then go on a let's see how much chaos I can create in the most fun way I can think of. Lot's of ways in a game to let off steam and break the cycle and make that frustration/overwhelmed feeling go away.
It's just a game. Win or lose the sun's still coming up tomorrow.
Unless you have someone who is giving you some good Tips and advices for that
region. Personally i would say the Arctic is challenging, but not impossible to master.
I went there when i reached 7500 Investors (more or less) and i took myself all the
time and to not rush there anything.
The Video i was watching was this one here, hope it helps the OP as well.

Bug while he was not following the Storyline when he was entering the Arctic.
So instead of Focusing on King Williams Island and, the instructions from
Lady Faithful he settled down on all the other Islands before, and then he got
stuck on the Storyline and not being able to finish it and clearing the Tents on
the Island.
I could not relate to that, i was doing everything by the Book
and i was not encountering any kind of Bugs in that direction.
So if you go there, keep your Focus on King Williams Island only, pay attention to
the instructions from Lady Faithful, and you should be good to go.
Settling on other Islands should be your absolute lowest concern in the very
beginning in the Arctic.
