I am sorry, noob question, where are the orchards in the building menu? Or when they get unlocked?

The Orchard is in the New World Jornalero's menu. Not sure what unlocks it there. In the Old World or Cape T it is under Engineers and unlocks at Level 2 Engineers skyscrapers under Chewing gum (cinnamon) You can hover over the chewing gum menu to see other requirements to unlock it. New World will allow Coconut Oil, Citrus and Camphor Wax.

By the way, if you have haciendas, the Specialised Lumberjack Training policy increases the productivity of orchards in the new world, so does the Bronze Age exhibition in both worlds.

Old World orchard also unlocks with tourists, Jam being one of their earliest demanded goods.
