I would suggest that Schooner and Clipper is very cheap and useful limited to one map only, not 2 or 3 map.
Cargo Ship (Steam trading ship), World Class Reefer, Oil Tanker, Extravaganza Steamer, Great Eastern is awesome between world but not great local trade for cost,
So for cost efficient for money and influence, Schooner and Clipper is great local map while all steam ships cargo are too costly but steam ship cargo is far better for between world map, that you better off use Cargo Ship with item for world map between but not great for local map, however.
Now for Airship, Airship is best, powerful and speedly, and more safety during war than Cargo Ship (Empire of Skis do add anti air ship and harbor defense so you might want to buff speed and health point/health repair bonus item if there any.
But Airship is way too costly but awsome and best for World map, just like Steam Ship Cargo, but much faster but loading is slow so I would said it's little faster than Cargo Ship but very high cost for little gain speed, but I love Airship, yet those Airship is end game, Let us not get too ahead of Airship. You can change little route so Airship don't cross AI Island where it had a anti air gun harbor defense if you war with that AI, but I don't see much AI building fleet of Flak Monitor, but I do see AI had very few of Harpy (Armed) here and there for 2 Star, I had not test or play with 3 star AI with airship.
Cargo ship had 2 item spot, one of should speed and cargo slowdown while other is white flag that ship can't be attacked. I just use white flag on Schooner and Clipper if I had AI that may be war in future or current. If not play with AI then it's useless, use speed item and cargo slowdown.
For Air Mail route, well, only airship can do mail, Harpy is great for local and oversea map, for just mail. I had not lot of experience this one at this point. I don't think anyone need beyond Harpy for this trade type.
All kind of Airship but war airship is very fast, but it's only useful what kind of item you transport, it's cost lot of money to take care of fleet of airship. Those are long term end game, that might replace cargo ship but for early and late game, cargo ship is great for cost, Airship is just for end game. I love airship but very costly, it's easy eat up lot of money when set up Airport and Fleet Airship.

Only downside with Airship that they don't had great white flag item to install, it's seem only water boat/ship can had white flag, can't be attacked as long as one don't had a empire of skies DLC, Before empire of skies, Boreas is very good airship and can't be attacked at all, but now I'm not sure what is best airship, all are good for certain role. I guess Harpy might great transport full of gold from new world to old world or The Arctic Gold mine 3 time better than normal gold from new world, Manticore might be great transport full fur from Arctic to Old world or Zephyr is great full transport of rum or coffee due heavy demand, it's depend how much product and how much world need, as I said Airship is great for 50,000 investors or more,
If less than 50,000 investors, I guess Cargo Steam Ship is better for cost, not airship due lightly demand and supply, Correct me I'm wrong?
Bottom Line, for transport world map, Cargo Ships is good start to do that, Airship even better when you had very large supply and demand. , sailing trading ship better off for local trading, not world map. I found it's just inefficient in long terms. Don't worry, Sailing Trading Ship is still useful in end game, just for local trading due short term trading, if your main island in old world don't had red pepper but you had other island in same old world map, Sailing trading Ship would be better than Cargo ship and Airship for the cost, but just local trading only.
I don't know if or how the wind plays a factor when a boat is travelling between regions. I will say that Items and Specialists definitely DO affect the travel time between regions.
Early game I prefer Clippers. Faster and with a higher cargo capacity, they are ideal for me in that if I need to increase they amount of goods I need sent, I can always add more rather than have to build another ship. Influence cost will be the same (2 Schooners to 1 Clipper for 4 cargo slots total), Maintenance will be more, but I feel the speed and convenience is worth it.
Eventually, I replace the Clippers with Cargo Ships. I like to have a consistent flow of goods, and not have to worry about the unpredictability of the wind. Also, if there's a war going on, I like that it has two slots, one I can use for speed/cargo slowdown reduction, and one for a white flag.
For long distance runs, say like from the Arctic to Cape Trelawney, I use Air Ships. I have not had the opportunity yet to use the new zeppelins in the Empire of the Skies DLC, but I do use the original air ship from The Passage DLC.
Depending on availability, I like to use Extravaganza Steamers for special situations. Like I always haul Coal up to the Arctic, and Coal runs out pretty fast, so it's nice having a Extravaganza with three items that boost speed. I'll probably replace this with zeppelins once I get to use them in the new DLC.
