It helps when your engineers are located at the towns periphery, instead of directly in the middle, so there is space to put down a power plant. But that's actually true for all population upgrades and the buildings they require.
Well, but then, often enough I forget about that too.
Stamps ruined it for me, all im doing now is throwing down templates, there's no real reason not to do it this way.
I use stamps for some stuff a lot of people swear by the 10x10 design for housing but I think it wastes a ton of space. If i want to create space for something new i just use the move tool you can shift things around fairly easily with that just click and drag and you can move all your housing over a few tiles to make room if you need it.
And the thing is when you start a new sandbox or campaign, you now know and plan ahead. I actually never use stamps/templates. Of course, they weren't there when I first started playing, so I kind of learned without them, but it really is very easy once you get the hang of it, and you can create sprawling, beautiful cities with or without premades, AND while compensating for future land use due to tracks or monuments or whatever.

I love it too. It's super flexible and it makes for nicer looking cities than hyper efficient grid builds. But some people don't care about beauty, they like not "wasting" any space. So it's not for everybody.
I know that's part of the argument for it I just disagree that it's worth the trade off. I'd rather just make larger parks in some areas i can get creative with or add some roads with trees/grass as a median and still be able to get more efficient coverage of boosts from the town hall etc. But I mentioned it because i know people like it so it's an option.
