Not really.
As far as I'm concerned, my goal is to create an incredibly attractive Crown Falls(Sunken Treasure DLC). I want it to have a complete Zoo, Museum, and Botanical garden, a Palace with around 80 Wings. I want it to produce nothing, and be supported by Islands everywhere else. I want it 100% powered by gas(more beautiful) from The Arctic. I want it to have 7000 Academics(I think that's how many you need to create anything you want).
In a save game from 3 years ago(which I have been playing a bit again), I completely eliminated Lady Hunt, Alonso has just one small island, and Gasparov not much more. I'm playing it again, and don't want to eliminate anyone this time. I have taken Lady Hunts main Island though, which I'll use for Industry now.
Money problems are an early game thing. Once you have a number of Investors, and they're mostly satisfied with goods, money is never an issue again. In my 3 year old savegame, I'm 1.3 million coins per day, and at the cap of 100,000,000 coins.
My „typical“ way is to first build a fleet to defeat all enemies, after that im building skyscrapers like i‘m playing Cities:Skylines.

There is no typical way to play, really. The game doesn't establish any goals for you. It's basically whatever you want to achieve.
Want to go to war? You can start a war. Want to build massive cities? You can focus on that. Want to create paradise? Go create it. Want to do all three? You can do that, too!
Sure there are game over scenarios you wish to avoid, like going bankrupt or getting yourself conquered, but avoiding these doesn't necessarily have to be your driving motivation to do anything. It can be if you want, but it's optional.
Do you guys prefer to play with or without AI/priates?
There are mods, but there is no Steam Workshop. You have to use Nexus Mods.
I personally like having AI opponents and Pirates. I hate living in an empty world.
And, to be frank, the Pirates are pushovers, even when you set them to Hard, they're not a challenging opponent. A pain in the butt, maybe, but not too strong, and easy to contain.
They pull their needs from the warehouse. If you want to know if you produce more or less or exactly what you need, there is the almighty statistics screen. It tells you literally everything you need to know (well except one little thing: your income from trading goods to vendors via trade routes). Here's a great video about it. The further you'll progress into the game the more tedious this would get without knowing how to use the statistics screen. You will have production and consumption spread between multiple islands and regions. The screen doesn't only tell you if you produce enough but it also helps you with optimizing your trade route network. Doesn't really help if you produce enough but fail to transport all of it after all. It's just a great tool und understanding it will make the game much easier to handle.
Bonusses from items (like extra gold from mines or gold bars from fishing) are included, but no routes.
Is that charter route coming from another island of yours that is producing this product or do you buy the product from a trader? If it's the former, yes, you can show that in the statistics screen by choosing both islands at the same time (ctrl and click on the islands you want shown). Buying and selling products by active trade is not reflected in the statistics screen directly, you can however see how often your ship is bringing these goods. If it arrives every five minutes with 10 tons on board for example, that means that this route provides for the consumption of two tons per minute.
You can see your trade routes by selecting a product on the storage screen and then click trade routes on the right side of the screen. That will show all routes that carry that product. That screen is very useful if you want to know if your trade routes work properly. You can see how often the ships come and how much they carry each time.
