Setting minimum stock levels

I just can't seem to get this working, in fact I'm having trouble with the whole trading system.
In the warehouse I set a minimum stock level of 100. I then start a trade route trading that product and would expect to maintain a stock level of 100. However this doesn't seem to work, the trading schooner takes every one of the goods.
Also, the same appears to happen with the static trades. if I have an item to be sold when above 100 and set minimum stock level to 100 and lock it shouldn't that stock level be maintained?
Any explanation would be very welcome

Never experienced what you're describing, the levels seem to be maintained properly.
Could you post a screenshot of how one of the goods is set up?

The stock levels are for passive trade only (what you refer to as static trade). However, not all the AI have all the goods and they also don't carry infinite coin.
