Hint: minimum stock only affects trades and transport not the consumption/production on that island.
If you want to know if you produce enough schnaps for your people (or anything), press ctrl q to bring up the production screen. If the green bar is bigger than the blue one, you're good. Always use this function because you want to make sure you provide enough goods but also you don't want to overproduce too much, especially early on, that can ruin you. The exception of course being soap. Overproduce the crap out of that and sell excess to Eli.
