Creating more fields/pastures than required
Is there any benefit to doing that? I watch coffee and khaos creating production lines where he sets up twice as many fields as the farm shows is required.

No, there is no benefit to building more fields than necessary.
There are items and effects that increase production at the cost of also increasing the number of fields required, though. You could plan ahead for this by already building more fields than necessary at the start so you don't have to rebuild your farm setups later.

Yeah, no extra benefit.

Aside from the reasons Tankfriend listed, that feature is also there for aesthetic purposes. Sometimes people just want perfectly square farm plots, or to fill in that last bit of open area that can't be used for anything else.

As mentioned, twice as many fields is too much unless you're planning for specific specialists/items with a trade union, Also things like tractors and fertilizer sheds, You might not need them at the early stages of the game but it's nice to prepare for them once you unlock those upgrades.

Tractors need 50% more fields. One way you can cater for this is to build farms in blocks of 3. Allow space for your tractors and silos. Then, when you can build tractors, just delete the middle farm and fill the space with fields for the other two.
For Hacienda farms, you may want to build all 96 fields at once. It reserves the space, but makes no difference to yield.
