Why disable pirates?
I've seen comments about disabling pirates when starting a game - why?

Because combat and diplomacy are aspects that are very poorly implemented in ANNO games and many people actually see it as annoying nuisance from what they want to do in these games - to build an economy.

Not that it's a bad thing, but does that just leave building stuff or is there environmental stuff like disasters?

Yes, well economy and building is working pretty well (despite the main mechanics are basically the same as in previous ANNO games), but especially with all DLCs, there quite enough of content for dozens of hours of gameplay.
But there are no disasters or events

Pirates are pushovers, even on Hard setting.

They've never been a threat. You can even make peace with them, too. Making peace with Anne Harlow and trading rights can get you access to a sweet ship that's great for expeditions.
