Top bar is how many you need (blue bar) and bottom bar how many you produce (green bar). The number next to it on the right tell you what the difference is.

Also, shaded-out parts of the bar mean that you can produce or can consume that much, but for some reason you currently aren't (buildings not working at 100%, for example).

Keep in mind that there's only two ways to view the info; Island-specific or ALL islands (old world, new world, arctic, and trelawney put together). While it's nice that we have a way to see supply and demand, I'm baffled that you can't compare a selection of islands.

With a large empire, I don't need to know what my whole empire looks like most of the time. Buy I do need to know if the supply from Island B is sufficient for Island A. Currently, there is no way to narrow this down. I can either look at one island, which gives me limited info for just that island, or... THE ENTIRE OF EVERYTHING! Which is equally as useless as the island-specific when trying to see if, for example, Canned Food supply that is being shipped from Island B is high enough to meet demand on Island A.
