The classroom door is required for the achievement (specifically you need to proc the jumpscare if I remember correctly), while the Peephole is just for fun. I think interacting with the curtains, light switch, and cupboard at Home is also fluff (with a possible jumpscare chance?).
The two Peephole encounters I've seen are
-- A creepy man looking at you from one of the other apartment doors as he fades away.
-- A shadowy figure with eyes at the far end, where the elevator is.
Some peephole stuff seems to have some cut content based on the developer's twitter postings.
The only other interactable I've found besides the funds in the changing room is finding the hole in the painting at the fear festival.
Like the man standing back in the corridor, watching.

Actually, that's just the "Other" neighbor trigger that can happen when you click away. I've had him come up on my battle screen when I took a break in the middle of a fight.
To my knowledge, checking the peephole doesn't cause any triggers or jumpscares in itself. One enemy you can fight uses the peephole background, but the fight itself isn't triggered by it.
