But honestly I switch between all the ships pretty regularly (maybe every 10 hours), just to mix things up.
Such great slotting/gear options but Jesus- that cockpit is just the absolute worst.
And worst part of it you can tell its intentional cause if the seat was just moved down and to the right a bit the visibility would be amazing.
For dogfighting, I've had the best success with the Foxbat. The turret + dual autocannons + dual tachyons + 1 Tracer turret works for me. The Cargo space sucks though, and the Cockpit is nice, it has a whole Star Trek LCARs theme going on with the HUD.
For a Jack of All Trades, the Dingo, it's a Coyote with 2 less guns, 2 more missile slots, and more Cargo for light Cargo runs. You can load up on swarms and fire-and-forget missile barrages in dogfights while still doing cargo runs.
For Cargo hauling, the Mattock. It's cockpit is bad, but the exterior is nice and gives me Millennium Falcon vibes. Shame it lacks a turret though, I would've stuck with it if it did.

Intentional, yes, cause the Mattock is a two-seater. Take it out in space, enter the photo mode, then spin the camera around and look into the cockpit from the outside. You'll see a second empty chair next to Juno.
Kicking a dead horse I know, just saying
It's why I've really taken to the Dingo. I love the Mattock and it's Rebel B-Wing vibe, but the Dingo has a better reactor core and a less cluttered cockpit view.
And model design ? None looks good to me, maybe Foxbat. My fav ship in a space game is from Eve Online, called MOA.
Going to see if I can finish the story with a Foxbat.
Currently have no idea if it's possible.

However, the ship I loved and wished I could keep flying, was the Senora. I loved the design, I loved the cockpit, I liked how it handled, but I had to upgrade to stay competitive. I have access to the Sequoia variant, with better shields and power and more cargo space ect, but frankly, it just doesn't cut it and frankly, trading is more of an after thought in this game.
I did fly the Mattock for a while and did like it a lot for the balance of firepower, cargo space and tankiness and I even appreciated its looks, being Handsomely Ugly if that makes sense, like the Millenium Falcon, but frankly in this game, being able to turn enemies into scrap as efficiently as possible trumps absolutely everything, which is a real shame, since it very much dictates what ships you fly.
For endgame (once money isn't important anymore) I'd stick to Coyote though. 6(!) weapon hardpoints makes you win any head-on-head fight, two rocket slots for big ships and dodgy enemies, fast enough for long travels and plenty of energy to refill my shields whenever I need to
