The main strength of the game is in the writing and world building, which also happen to be the strongest parts of the demo. The main game is a semi-open world with a series of smaller plotlines similar to what you get in the demo, though most of them are much smaller and lack the narrative focus because, well, open world. All of the companion focused stories are quite good, easily as long and well written as the demo story. If the writing is what you enjoy, I strongly recommend getting it.
The game is indeed quite difficult, though the above poster overstates how difficult it is. It's RNG heavy in the same sense as Darkest Dungeon or Battle Brothers where you need to save scum in order to understand the game, but a lot of the satisfaction of playing comes from mastering the game to the extent that you don't need to save scum anymore. Reading guides or the forums here helps quite a bit.
There's an interesting world to be explored but you have to deal with all these challenges first. Also, be aware that it is a slow game. Every task that you might wish to undertake is time consuming (unnecessarily so, in my opinion). So you really need a lot of free time to play this game.
Be aware that most of the world map is not explorable- only roughly 1/4 of it by some estimates. Some players do take issue with this.
Another issue for some is the punishing combat. Especially in the early game, even when you win crew combats, you often lose too many resources to make them worthwhile. Many people reload at this point because the setback can be too painful. Combat becomes more tolerable and even enjoyable once you have become wealthy enough and strong enough to minimize your losses. You may even gain enough loot from victories to net a profit. And mercenary tasks eventually pay a lot.

Fair enough if that's their coping mechanism, but I sure hope no one takes such posts seriously.
It has some of the best world building I've seen in any video game ever and I think most people recognise that. The split comes from the gameplay mechanics (which hinder some people from experiencing this awesome world they want to explore so badly) and the fact that you have to read a lot to experience it all (which some people don't want to bother with).
So buy it if you
- like to read and fully immersive yourself into a detailed, lore heavy fantasy world
- don't mind slow gameplay where you need to plan ahead or go bankrupt / starve (Especially at the start. If you do it right you'll be swimming in money later.)
- don't mind to reload from time to time due to unforeseeable difficulty spikes (Especially in quests, you have no option but to go in and see if your companions can handle it already. Once a fight has started and you see what's coming there is no retreat option.)
Personally I can't put it down, I'm absolutely in love.
I think its aimed at more mature audiences in that the game requires you to plan and think at times if you're going to difficult areas.
I had some difficulties in my first couple of attempts but after some learning experiences I'd say the game isn't that difficult. Small things like initially making sure I have enough supplies to reach the destination but also having enough to get back again.
I'm at 11 renown and 5000 Bross currently, no manual saves and or reloading aside from when I turn my pc off, ofc.
If you like challenging strategic RPGs, you will like this game.
Otherwise, I have no clue. Everybody in my friend group of RPG fans likes it.
150+ hours in the game:
1) Could not finish it twice, because late game quests/events are bugged, I reported a lot of defects, very few have been fixed;
2) No main story, not that many quests in general, most of them - bring me something;
3) Dead world, no reaction to whatever you do;
4) Boring companions, no relationships;
5) Broken anbalanced gameplay/mechanics, somehow with each patch it is getting worse, many skills/perks are useless or have no impact on the gameplay;
P.S. The game forces you to save-load a lot, like really a lot.
