Based off info provided by the game itself, you have, at a minimum, 10 in game years to complete everything (as a new "protagonist" appears every 10 years according to the games own lore, and that of course only counts if it doesn't require the previous protagonist to have already finished their duty within those 10 years. For all we know, based off the games own lore, your time limit is basically "However Long It Takes You To Beat The Labyrinths").
From what I can see, the only impacts (at least so far for my playthrough) of the Week System, are:
1: Monthly/Seasonal Events (some special events only occur in certain months/seasons).
2: Which dungeons have stronger monsters than normal (Summer dungeons have stronger monsters in summer, Spring in spring, etc).
Aside from those two points, I have yet to see any need/reason to worry about running out of time.
...and thank you, Tank for the answer(or the closest thing to an answer we're likely to get).
the gimmick the months have corelate to the zodiac affinity the maidens have as you attempt to game the RNG
