Is there a time scaler mod that I can download that can slow down/speed up time?

You can do that in the options menu. you can make it real time [your PC's time]
super fast,super slow, anything. Just look in the options

Also as a note, no matter how fast you make time go by the crops still take the same amount of actual time to grow. That only changes if you change the difficulty, or modify some files.
