Just gonna quote this 'cause this person is a bit wrong here. The F-14 is great clear through the end of the campaign on Mercenary mode and will have 0 trouble handling any of the missions the game throws its way.
It wouldn't be applicable to this game, but the Tomcat can fly in a pretty wide speed range at varying degrees of wing sweep and can lie about how much energy/speed it currently has once you're in visual range of it. The wing position could be set manually in real life, usually wasn't obviously but uses for it were, as you pointed out, pretty limited.
