Post Stall Maneuvering
I saw it in the trailer and in a review video, but I don't know how to do it. How do you do it on PC?

I think you're confusing Ace Combat's Post Stall Maneuvering/High-G Turning to just simply braking during a turn. Project Wingman has no PSM/High-G turning

For what I've read, you have PSMs but it's in the most expensive planes and you equip it like you do with flares

there is a, spoiler: counter measure loadout option for certain planes that allow you to PSM, kinda

AOA delimiter is a replacement for flares on some of the most expensive planes. If you equip it, simply hold your flare button(I believe there's an option for toggle) hold your decelerate key, and pull up. You don't have to be below a certain speed. This is just super maneuverability not post stall maneuverability.

No high-G turning makes the game feels boring as old AC4,5,0 games. I hope they'll add it in future upgrades.

It does, requires some aircraft with a special module.

Supermaneuverbility is PSM actually.
You are well beyond stall AOA and yet you retain maneuverbility, some call it PSM, some call it supermaneuverbility, it's the same thing.

Think about the PSM in AC:AH.
PSM in AC7 is far better.

Agreed. People rely way too much on High-G, and that is what makes the game boring, in my opinion. Without it, we must get more creative when engaging an enemy, which makes for more interesting fights when you know what you're doing.

Was wondering about that. Making a module to choose between PSM or flares is quite fun decision.

It backfires often tho, since you lose your speed even faster. If used wrong/too often, you're actually dead (only in multiplayer tho, AI in AC7 is trash).

I wouldn't call it trash, it had potential and I liked it personally, but after seeing what some indie devs made with project wingman made me understand that PA and Namco could've done a lot more
