In general, a lot of difficulty comes from people trying to play this game like Zelda. You are heavily punished for attempting to face tank and spam hits. You can usually get in 2-3, but will need to dodge/move away and prepare for a counter after that. Getting overly aggressive is guaranteed damage.
Also, many players sleep on the bow and arrow early on. Get some distance from the boss and fire as many shots as you can until you run out of SP. When you get that back with your melee attacks, repeat. This is one of the easier ways to safely inflict damage. If you ever decide to do an Umbrella run for the achievement, it becomes essential to master this.
