Will switching melee weapons lock the Umbrella achievement or ...

... is it only locked if I hit an enemy with any other melee weapon instead of the Umbrella? I switched to the sword once in the menu but haven't attacked anyone with it. Just want to know where I'm at with the achievement since I can easily restart because I'm not that far into the game.

As long as you haven't attacked anyone I think it's OK.
When you have the umbrella equipped its background in the weapon menu is red only if you have never attacked anyone with another weapon, probably to indicate that you're still eligible to the achievement.
Can't confirm though.

Hm interesting. Well, I'll take no chances and start over. But I'll try out the red flash around weapon first so I can confirm if the color does represent the indication if the achievement is obtainable or not.

I can confirm. Interestingly enough hitting with another melee weapon will turn the Umbrella from red to grey. But doing a charging attack with another melee weapon doesn't change the color of the Umbrella.
