Bud, just toggle back to normal if you're not ready for stronger enemies.
You need to master the rolly polly.
Other than that you can just use dodge roll. Even on normal that is a good thing to do for stamina chars in light armour against anything bigger.

Nah dude, your post was a lazy clown farming attempt - suggesting to use a dodge roll while this game melee combat clearly revolved (and still revolves) around parrying - that's a big brain move ngl
Still sprinting away is more efficient.
Rolly polly is rarely useful but even then its cheating that should be treated as an actual Bug and be removed from the game.
